  • 8 oz rotini pasta
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 3/4 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Start by heating a large skillet over medium heat. Add the ground beef and cook until it’s nicely browned and fully cooked through, usually around 5-7 minutes. Be sure to stir occasionally to ensure even cooking. Once it’s browned, drain any excess fat.
  2. Next, add the diced onion to the skillet. Cook for about 3-4 minutes until the onion is soft and translucent. Afterward, add the minced garlic and stir for an additional 30 seconds to a minute until fragrant.
  3. Sprinkle in the paprika, salt, and black pepper, stirring well to coat the beef and vegetables evenly.
  4. Pour in the beef broth and bring the mixture to a gentle simmer. Once simmering, add the rotini pasta. Cover the skillet with a lid and let it simmer on medium-low heat for about 10-12 minutes, stirring occasionally.
  5. Once your pasta is tender, pour in the heavy cream and add the shredded cheddar cheese. Stir everything together until the cheese melts and the sauce becomes creamy.
