- 375 g all-purpose flour
- 300 g granulated sugar
- 1 teaspoon salt
- Zest of 1 large lemon
- 115 g unsalted butter, very cold and cut into small cubes
- 3 large eggs, slightly beaten
- 900 g fresh strawberries, washed and sliced
- Juice of 1 large lemon
- 1 tablespoon cornstarch
- 150 g granulated sugar
Instructions
- Prepare the oven by preheating it to 175°C (350°F) and line a 23×33 cm baking dish with parchment paper.
- Make the crust mixture by combining flour, 300 g sugar, salt, and lemon zest, then incorporating the cold butter until crumbly.
- Incorporate the slightly beaten eggs into the mixture, ensuring a crumbly yet cohesive texture.
- Press two-thirds of the dough into the bottom of the prepared baking dish to create a solid crust.
- Prepare the strawberry filling by tossing sliced strawberries with lemon juice, cornstarch, and 150 g sugar.
- Spread the strawberry filling evenly over the crust.
- Crumble the remaining dough over the strawberry filling evenly.
- Bake in the preheated oven for 45-50 minutes until golden brown.
- Once cooled, lift the bars out of the pan and slice them into portions.
Notes
Store leftover bars in an airtight container in the fridge for up to three days.
