Ingredients

  • 375 g all-purpose flour
  • 300 g granulated sugar
  • 1 teaspoon salt
  • Zest of 1 large lemon
  • 115 g unsalted butter, very cold and cut into small cubes
  • 3 large eggs, slightly beaten
  • 900 g fresh strawberries, washed and sliced
  • Juice of 1 large lemon
  • 1 tablespoon cornstarch
  • 150 g granulated sugar

Instructions

  1. Prepare the oven by preheating it to 175°C (350°F) and line a 23×33 cm baking dish with parchment paper.
  2. Make the crust mixture by combining flour, 300 g sugar, salt, and lemon zest, then incorporating the cold butter until crumbly.
  3. Incorporate the slightly beaten eggs into the mixture, ensuring a crumbly yet cohesive texture.
  4. Press two-thirds of the dough into the bottom of the prepared baking dish to create a solid crust.
  5. Prepare the strawberry filling by tossing sliced strawberries with lemon juice, cornstarch, and 150 g sugar.
  6. Spread the strawberry filling evenly over the crust.
  7. Crumble the remaining dough over the strawberry filling evenly.
  8. Bake in the preheated oven for 45-50 minutes until golden brown.
  9. Once cooled, lift the bars out of the pan and slice them into portions.

Notes

Store leftover bars in an airtight container in the fridge for up to three days.
