Instructions

  1. Start by preparing the cranberry crunch base. In a medium mixing bowl, combine the graham cracker crumbs with the melted unsalted butter. You want to mix until the crumbs are fully coated and achieve a consistency resembling wet sand. If you’ve chosen to incorporate toasted pecans, this is the moment to add them into the mixture. Next, take about two tablespoons of this mixture and press it firmly into the bottom of each section of your mini muffin tin.
  2. While the base is hardening, it’s time to prepare the cheesecake filling. In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it becomes smooth and free of lumps. Gradually sprinkle in the granulated sugar while continuing to beat the mixture.
  3. Now that you have a beautifully thick cheesecake filling, it’s time to incorporate the showstopper – the strawberries! Using a spatula, gently fold in the finely chopped fresh strawberries.
