- 1 heaping cup fresh strawberries, diced
- 1 cup powdered sugar
- 2 tablespoons milk or cream
- 1/2 teaspoon vanilla extract (for the glaze)
Instructions
- In a large mixing bowl, start by whisking together the flour, baking powder, salt, and sugar.
- Once your dry ingredients are combined, add the cold, cubed butter and cut it into the mixture until it resembles coarse crumbs.
- In a separate bowl, whisk the heavy cream, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry mixture, and mix gently until just combined.
- Fold in the diced strawberries, ensuring they’re evenly distributed.
- Transfer the dough onto a floured surface and pat it into a round disc, about 1-inch thick.
- Cut the disc into 8 equal wedges.
- Place the cut scones onto a parchment-lined baking sheet and brush the tops with cream.
- Bake in a preheated oven at 400°F (200°C) for 18–22 minutes until golden brown.
- Let cool slightly and drizzle with glaze.
