  • 1 cup powdered sugar
  • 2 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract (for the glaze)

Instructions

  1. In a large mixing bowl, start by whisking together the flour, baking powder, salt, and sugar.
  2. Once your dry ingredients are combined, add the cold, cubed butter and cut it into the mixture until it resembles coarse crumbs.
  3. In a separate bowl, whisk the heavy cream, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry mixture, and mix gently until just combined.
  5. Fold in the diced strawberries, ensuring they’re evenly distributed.
  6. Transfer the dough onto a floured surface and pat it into a round disc, about 1-inch thick.
  7. Cut the disc into 8 equal wedges.
  8. Place the cut scones onto a parchment-lined baking sheet and brush the tops with cream.
  9. Bake in a preheated oven at 400°F (200°C) for 18–22 minutes until golden brown.
  10. Let cool slightly and drizzle with glaze.
