Instructions
- Begin by taking your freeze-dried strawberries and placing them into a food processor. Pulse the strawberries until they transform into a fine, vibrant powder.
- In a large mixing bowl, combine your softened cream cheese, powdered sugar, and vanilla extract. Using a hand mixer or a stand mixer, beat the ingredients together until they achieve a creamy and smooth consistency.
- Next, melt the white chocolate chips either in a microwave-safe bowl or using a double boiler. Once melted and smooth, allow the chocolate to cool for a moment before folding it into the cream cheese mixture.
- Using a tablespoon or a small cookie scoop, take portions of the cheesecake mixture and roll them into small balls about 1 inch in diameter.
- Once you’ve rolled all the truffles, it’s time to coat them. Take each truffle ball and roll it in the strawberry powder.
- After coating, arrange the truffles on a baking sheet lined with parchment paper. Carefully place them in the refrigerator and allow them to chill for at least one hour.
