  • 3 cups fresh spinach
  • 2 tablespoons olive oil

  • Salt and black pepper to taste
  • 1 cup fresh cranberries
  • 2 tablespoons honey
  • 1/4 cup chicken broth
  • 1 sprig fresh rosemary
  • 1 tablespoon balsamic vinegar

Instructions

  1. Begin by preparing the chicken breasts. Using a sharp knife, carefully slice a deep pocket into the side of each breast, making sure not to cut all the way through.
  2. In a large skillet, add 2 tablespoons of olive oil and heat over medium heat. Once hot, stir in the minced garlic and sauté until fragrant, about 30 seconds. Next, add the fresh spinach and cook until wilted and bright green.
  3. Once the spinach mixture has cooled, generously fill each pocket with the creamy spinach mixture.
  4. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Sear the stuffed chicken breasts until golden brown on both sides.
  5. Add the cranberries, honey, balsamic vinegar, fresh rosemary, and chicken broth. Simmer until the cranberries burst and the glaze thickens.
  6. Spoon the glaze over the stuffed chicken breasts and simmer gently for an additional 5 to 10 minutes, until the chicken reaches an internal temperature of 165°F.
