Description

A delicious weeknight dinner featuring crispy chicken pieces coated in sweet chili sauce.


Ingredients

  • 500 g (1 lb) chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper, to taste
  • 23 tbsp vegetable oil (for pan-frying)
  • 1/2 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lime juice
  • 2 cloves garlic, minced
  • 1 tsp grated ginger (optional)
  • 1 tsp sesame oil (optional)
  • 1 tsp red pepper flakes (optional)

Instructions

  1. To start, season your chicken pieces with a sprinkle of salt and pepper to enhance their natural flavor.
  2. In a medium bowl, mix together the cornstarch and flour until well combined.
  3. In another bowl, beat the eggs until smooth.
  4. Take each piece of chicken and first dip it into the beaten eggs, ensuring it’s fully coated.
  5. After that, roll the chicken in the flour mixture, pressing lightly to ensure the coating sticks well.
  6. Heat up vegetable oil in a large skillet over medium-high heat.
  7. Once the oil is shimmering, add the chicken in batches, being careful not to overcrowd the pan.
  8. Cook each piece for about 3–4 minutes on each side, or until they turn golden brown and are cooked through.
  9. Transfer the chicken to a plate lined with paper towels to absorb any excess oil.
  10. Carefully remove most of the oil from the skillet, leaving only about a tablespoon behind.
  11. Add the minced garlic and, if you choose to, the grated ginger.
  12. Sauté them for roughly a minute until the garlic becomes fragrant.
  13. Pour in the sweet chili sauce, soy sauce, honey, and rice vinegar.
  14. Stir everything together and let it simmer for about 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  15. Return the chicken to the skillet, ensuring each piece is well-coated with the sauce.
  16. Allow the chicken and sauce to cook together for an additional 2 minutes.
  17. Garnish your Sweet Chili Chicken with sesame seeds, sliced green onions, or fresh cilantro, and serve.

Serve over steamed rice, noodles, or with stir-fried vegetables.
