Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the cubed sweet potatoes with olive oil, salt, black pepper, smoked paprika, and garlic powder. Toss them well until each piece is evenly coated. Spread the seasoned sweet potatoes on a prepared baking sheet in a single layer and roast for about 25–30 minutes, or until they are tender and beautifully caramelized, flipping halfway through.
- While the sweet potatoes are roasting, whisk together the pure maple syrup, Dijon mustard, apple cider vinegar, and fresh thyme in a small bowl.
- Season the chicken with salt and pepper and sear in a hot skillet for 4–5 minutes on each side until cooked through. Remove from skillet.
- Pour the maple Dijon sauce over the chicken in the skillet and simmer for 2–3 minutes until thickened.
- Slice the chicken and assemble bowls with roasted sweet potatoes, grains, and vegetables. Garnish with parsley or thyme.
