  • ¼ cup coconut oil, melted
  • ½ cup pure maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • ½ cup cocoa powder
  • ½ cup almond flour (or oat flour)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips
  • Melted dark chocolate, for drizzling

Instructions

  1. Start by preheating your oven to 350°F (175°C) and preparing your 8×8-inch baking pan. Line the bottom and sides with parchment paper, allowing some overhang to make the brownies easier to remove later.
  2. In a large mixing bowl, combine your mashed sweet potato, almond butter, melted coconut oil, maple syrup, and vanilla extract. Mix these ingredients thoroughly until you achieve a smooth consistency.
  3. Next, add the cocoa powder, almond flour, baking powder, and salt to the wet mixture. Stir gently until just combined—be careful not to overmix.
  4. Once your batter is ready, fold in the dark chocolate chips.
  5. Spread the brownie batter evenly into the prepared pan, smoothing the top with a spatula. Bake in your preheated oven for 28–32 minutes.
  6. After baking, allow the brownies to cool completely in the pan. Once cooled, drizzle melted dark chocolate on top, then slice into squares.
