- 1 teaspoon olive oil
- 1 large egg
- 0.5 teaspoon sea salt
- 0.25 teaspoon ground black pepper
- 0.5 teaspoon curry powder
- 0.5 teaspoon dried thyme
- 60 millilitres wheat flour
- 240 grams mashed sweet potato
- 1 tablespoon butter, melted
- 120 millilitres mayonnaise
- 1 teaspoon mixed dried herbs
Instructions
- Start by preheating your oven to 200°C (390°F) and lining your baking sheet with parchment paper.
- In a medium-sized bowl, combine the egg, sea salt, ground black pepper, curry powder, and dried thyme. Whisk these together until well incorporated.
- Next, add in the mashed sweet potato and wheat flour, stirring until the mixture is fully combined and no lumps remain.
- Using a 60 ml scoop or measuring cup, carefully portion out the mixture onto your prepared baking sheet to create six mounds.
- Gently flatten the tops of each mound with a spatula to form evenly shaped patties.
- Brush the top of each patty with melted butter for added flavor and bake for 15 minutes.
- Flip each patty over, brush with more melted butter, and bake for an additional 10 minutes.
- While the patties bake, mix the mayonnaise with the mixed dried herbs in a small bowl until it’s smooth.
- Once your patties are golden and crispy, remove them from the oven and allow them to cool slightly.

Ensure your sweet potatoes are well-mashed to achieve the best texture and flavor for your patties.
