Ingredients

  • 1 teaspoon olive oil
  • 1 large egg
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon curry powder
  • 0.5 teaspoon dried thyme
  • 60 millilitres wheat flour
  • 240 grams mashed sweet potato
  • 1 tablespoon butter, melted
  • 120 millilitres mayonnaise
  • 1 teaspoon mixed dried herbs

Instructions

  1. Start by preheating your oven to 200°C (390°F) and lining your baking sheet with parchment paper.
  2. In a medium-sized bowl, combine the egg, sea salt, ground black pepper, curry powder, and dried thyme. Whisk these together until well incorporated.
  3. Next, add in the mashed sweet potato and wheat flour, stirring until the mixture is fully combined and no lumps remain.
  4. Using a 60 ml scoop or measuring cup, carefully portion out the mixture onto your prepared baking sheet to create six mounds.
  5. Gently flatten the tops of each mound with a spatula to form evenly shaped patties.
  6. Brush the top of each patty with melted butter for added flavor and bake for 15 minutes.
  7. Flip each patty over, brush with more melted butter, and bake for an additional 10 minutes.
  8. While the patties bake, mix the mayonnaise with the mixed dried herbs in a small bowl until it’s smooth.
  9. Once your patties are golden and crispy, remove them from the oven and allow them to cool slightly.
