  • 1 cup chopped pecans
  • 4 tablespoons butter (for glaze)
  • 1/2 cup brown sugar (for glaze)
  • 2 tablespoons heavy cream

Instructions

  1. Start your journey by preheating your oven to 350°F (175°C). While waiting for the oven to reach temperature, grab your 9×5-inch loaf pan. Line it with parchment paper, ensuring it sits snugly on the bottom and sides.
  2. In a large mixing bowl, start whisking together your mashed roasted sweet potato, brown sugar, granulated sugar, eggs, vegetable oil, milk, and vanilla extract.
  3. In a separate bowl, combine all the dry ingredients: all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Whisk thoroughly.
  4. Pour the dry mixture into the wet ingredients. Stir gently with a spatula until just combined.
  5. Pour the combined batter into your prepared loaf pan, smoothing the top. Place it in the oven and bake for 55–60 minutes.
  6. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack. Prepare the glaze, then pour it over the cooled loaf.
