Instructions
- Start your journey by preheating your oven to 350°F (175°C). While waiting for the oven to reach temperature, grab your 9×5-inch loaf pan. Line it with parchment paper, ensuring it sits snugly on the bottom and sides.
- In a large mixing bowl, start whisking together your mashed roasted sweet potato, brown sugar, granulated sugar, eggs, vegetable oil, milk, and vanilla extract.
- In a separate bowl, combine all the dry ingredients: all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Whisk thoroughly.
- Pour the dry mixture into the wet ingredients. Stir gently with a spatula until just combined.
- Pour the combined batter into your prepared loaf pan, smoothing the top. Place it in the oven and bake for 55–60 minutes.
- Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack. Prepare the glaze, then pour it over the cooled loaf.
