  • 1 package (1 oz) taco seasoning mix
  • 1 can (10 oz) diced tomatoes with green chiles, with juices
  • 2 cups sharp cheddar cheese, grated
  • 1 bottle (8 oz) ranch dressing
  • 5 packages (15 count each) frozen phyllo cup shells

Instructions

  1. Start by heating a large skillet over medium heat. Add the lean ground beef and cook until it is nicely browned. Make sure to stir occasionally to ensure even cooking. Once browned, pour out any excess fat to keep your filling light and delicious.
  2. Now that your beef is cooked, it’s time to infuse it with flavor. Add the taco seasoning and the can of diced tomatoes with green chiles, including their juices, directly into the skillet. Stir everything together and let the mixture simmer for about 5 minutes.
  3. In a large mixing bowl, combine the grated cheddar cheese and ranch dressing. Stir well to ensure that the cheese is fully coated with ranch dressing. Once well mixed, gently fold in the beef mixture until everything is nicely combined.
  4. Take the frozen phyllo cup shells and carefully spoon the prepared filling into each one. Be generous but avoid overfilling, as this can lead to spillage during baking. Arrange the filled shells on a baking sheet.
  5. Place the tray in your preheated oven and bake for 10 to 13 minutes if the shells are frozen, or for 8 to 10 minutes if thawed. Keep an eye on them as they bake; you want the filling to be hot and the phyllo shells to turn a beautiful golden brown.
