- 8 flour tortillas

- 1/2 teaspoon garlic powder

- Begin by preheating your oven to 375°F (190°C). Once that’s set, lightly grease your 9×13-inch baking dish with cooking spray or butter to ensure an easy release once baked.
- In a large mixing bowl, combine the shredded rotisserie chicken with 1 cup of shredded Monterey Jack cheese and 2 tablespoons of diced green chiles. Stir well to create a cohesive mixture that will pack flavor into each enchilada.
- To avoid cracking as you roll them, slightly warm the flour tortillas. You can achieve this by microwaving them for about 15 seconds or on a skillet over low heat for a minute. This simple step makes the tortillas pliable and easier to handle.
- Once warmed, place a generous amount of the chicken filling in each tortilla. Roll them tightly from one end to the other and arrange them seam-side down in your greased baking dish. Aim to fit all your enchiladas snugly in the dish.
- In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about one minute while continually stirring. This cooking process will create a roux that acts as the base for your white sauce.
- Gradually whisk in the chicken broth, stirring constantly to avoid lumps. Allow this mixture to cook until it thickens, which will take approximately 3–5 minutes. You’ll notice when it achieves a lovely, creamy consistency.
- Remove the saucepan from heat and add in the sour cream, remaining green chiles, garlic powder, onion powder, salt, and pepper. Stir everything together to create a silky, flavorful sauce.
- Pour the creamy sauce evenly over the enchiladas in the baking dish, ensuring every inch of tortilla is covered. This will keep the enchiladas moist during baking and add tons of flavor.
- Sprinkle the remaining 1 cup of shredded Monterey Jack cheese generously over the top of your enchiladas. Place the baking dish in the preheated oven and bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.
- Once baked, take your enchiladas out of the oven and let them cool for a couple of minutes. If desired, garnish with chopped cilantro or sliced green onions for an added burst of flavor and color. Serve them hot, and enjoy this comforting dish with your family!
