Description

This Teriyaki Chicken and Jasmine Rice Recipe is more than just a dish; it’s an experience that captures the essence of comfort food while being easy to prepare.

Ingredients

Scale
  • 2 cups cooked jasmine rice
  • 1 lb chicken breast, diced into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup frozen peas
  • 1/3 cup teriyaki sauce
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon honey (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Begin by preheating your oven to 375°F (190°C). This step allows your casserole to cook evenly.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add diced chicken breast and cook until fully cooked and lightly browned, about 7-10 minutes.
  3. In a large mixing bowl, combine cooked jasmine rice with teriyaki sauce, soy sauce, optional honey, garlic powder, and ginger powder.
  4. Add sautéed chicken, pineapple chunks, and frozen peas into the rice mixture. Gently fold together.
  5. Transfer the mixture into the greased baking dish, spread evenly, and cover with aluminum foil.
  6. Bake for 20 minutes covered. Remove the foil and bake for an additional 10 minutes until top is golden and bubbly.
  7. Remove from the oven and let cool for a minute. Garnish with chopped parsley and serve warm.

Notes

Make your own teriyaki sauce using soy sauce, brown sugar, ginger, and garlic for a deeper flavor.
