Instructions

  1. In a medium bowl, start by combining the softened mascarpone cheese with the powdered sugar, pure vanilla extract, and instant espresso powder. Using a whisk or hand mixer, blend these ingredients until you achieve a smooth and creamy consistency.
  2. Once your mascarpone mixture is smooth, gently fold in the finely crushed ladyfingers. Ensure the ladyfingers are well-distributed throughout the mixture.
  3. If the mixture feels too soft or sticky, chill it in the refrigerator for about 15 to 20 minutes for easier rolling.
  4. With clean hands, take about a tablespoon of the mixture and roll it into a ball. Place each truffle on a parchment-lined tray.
  5. For an extra layer of flavor and decadence, dip your truffles in melted dark chocolate.
  6. Lightly dust the rolled truffles with unsweetened cocoa powder.
  7. Finally, refrigerate the truffles for at least one hour before serving.
