- 4 slices sourdough bread, toasted
- 1 ripe avocado, cut into chunky cubes
- 1 cup cherry tomatoes, halved
- 1/2 cup cottage cheese
- 1 tbsp olive oil (plus a little more for drizzling)
- 1 tbsp lemon juice
- 1/2 tsp oregano
- 1/4 tsp garlic powder
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1/4 cup fresh basil, sliced or torn
- 2 tsp balsamic glaze (for the dark drizzle)
Instructions
- Start your preparation by toasting the sourdough bread until it’s golden and crisp.
- Once your bread is toasted, generously spread a thick layer of cottage cheese on each slice.
- In a bowl, combine the halved cherry tomatoes with olive oil, lemon juice, oregano, garlic powder, salt, and black pepper. Toss everything together.
- Spoon the prepared tomato mixture over the cottage cheese layer.
- Sprinkle with fresh basil leaves and drizzle with balsamic glaze.
Notes
To keep your avocado from browning, squeeze a bit of fresh lemon juice on it right after cutting.
