Description

This vibrant and delicious toast combines creamy cottage cheese with ripe tomatoes and avocado atop toasted sourdough bread.


Ingredients

  • 4 slices sourdough bread, toasted
  • 1 ripe avocado, cut into chunky cubes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cottage cheese
  • 1 tbsp olive oil (plus a little more for drizzling)
  • 1 tbsp lemon juice
  • 1/2 tsp oregano
  • 1/4 tsp garlic powder
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 cup fresh basil, sliced or torn
  • 2 tsp balsamic glaze (for the dark drizzle)

Instructions

  1. Start your preparation by toasting the sourdough bread until it’s golden and crisp.
  2. Once your bread is toasted, generously spread a thick layer of cottage cheese on each slice.
  3. In a bowl, combine the halved cherry tomatoes with olive oil, lemon juice, oregano, garlic powder, salt, and black pepper. Toss everything together.
  4. Spoon the prepared tomato mixture over the cottage cheese layer.
  5. Sprinkle with fresh basil leaves and drizzle with balsamic glaze.

Notes

To keep your avocado from browning, squeeze a bit of fresh lemon juice on it right after cutting.
