  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and black pepper, to taste

Instructions

  1. Start by preheating your oven to 375°F (190°C) to ensure a thorough, even bake for your bread. Slice your baguette or Italian loaf lengthwise and lay it cut-side up on a prepared baking sheet lined with parchment paper.
  2. In a mixing bowl, combine the diced tomatoes with minced garlic, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Stir thoroughly so that each component is well coated and the flavors begin to meld together.
  3. Lightly brush your bread with olive oil, focusing on even coverage. Pop it into the preheated oven and allow it to toast for 5–7 minutes, just until it begins to brown slightly.
  4. Take the bread out of the oven and spoon your prepared tomato mixture evenly across the top.
  5. If you’re using Parmesan cheese, sprinkle it over the top before returning the bread to the oven. Bake for another 8–10 minutes until the edges are golden and the tomatoes have softened slightly.
  6. Remove from the oven and allow it to cool briefly. Then, slice it into servings with your sharp knife and present it while still warm.
