- 1 large flour tortilla
- 3 eggs
- 1/4 cup cottage cheese
- Salt & pepper, to taste
- 1/2 cup shredded cheese
- 1 cup diced ham
- 1/2 cup tomatoes, diced
- 1/4 cup feta cheese
- 1/4 cup green onions, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium-sized bowl, whisk together the eggs, cottage cheese, salt, and pepper.
- Place a flour tortilla into a greased 8×8 inch baking dish.
- Scatter the shredded cheese over the tortilla, followed by diced ham, tomatoes, feta cheese, and green onions.
- Pour the egg mixture over the layered ingredients.
- Bake for 20–25 minutes until the top is golden and eggs are set.
Notes
Ensure your tortilla is fresh for best results; older tortillas can become stiff.
