Description

This Tortilla Egg Bake elevates breakfast or brunch with layers of fluffy eggs, melted cheese, and delightful bits of ham and fresh vegetables, all enveloped within a soft flour tortilla.


Ingredients

  • 1 large flour tortilla
  • 3 eggs
  • 1/4 cup cottage cheese
  • Salt & pepper, to taste
  • 1/2 cup shredded cheese
  • 1 cup diced ham
  • 1/2 cup tomatoes, diced
  • 1/4 cup feta cheese
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium-sized bowl, whisk together the eggs, cottage cheese, salt, and pepper.
  3. Place a flour tortilla into a greased 8×8 inch baking dish.
  4. Scatter the shredded cheese over the tortilla, followed by diced ham, tomatoes, feta cheese, and green onions.
  5. Pour the egg mixture over the layered ingredients.
  6. Bake for 20–25 minutes until the top is golden and eggs are set.

Notes

Ensure your tortilla is fresh for best results; older tortillas can become stiff.
