  • 115g unsalted butter, softened
  • 180g powdered sugar
  • 1 tbsp heavy cream or milk
  • 1 tsp pure vanilla extract
  • Pinch salt

Instructions

  1. Start by preparing your ingredients, measuring the almond flour and powdered sugar, and sifting them.
  2. Whip the egg whites at room temperature with cream of tartar, then gradually add granulated sugar until stiff peaks form.
  3. Fold in the dry ingredients into the meringue in two additions until it resembles flowing lava.
  4. Piping 1.5-inch rounds on a tray and letting them rest for 30 to 60 minutes until a skin forms.
  5. Preheat the oven to 300°F and bake for 15 to 18 minutes.
  6. Cool completely before making the buttercream filling by mixing softened butter and gradually adding powdered sugar along with vanilla, salt, and cream.
  7. Assemble by piping buttercream on half the shells and topping them with the remaining halves.
  8. Refrigerate for 24 to 48 hours before serving for enhanced flavor.
