- 180g powdered sugar
- 1 tbsp heavy cream or milk
- 1 tsp pure vanilla extract
- Pinch salt
Instructions
- Start by preparing your ingredients, measuring the almond flour and powdered sugar, and sifting them.
- Whip the egg whites at room temperature with cream of tartar, then gradually add granulated sugar until stiff peaks form.
- Fold in the dry ingredients into the meringue in two additions until it resembles flowing lava.
- Piping 1.5-inch rounds on a tray and letting them rest for 30 to 60 minutes until a skin forms.
- Preheat the oven to 300°F and bake for 15 to 18 minutes.
- Cool completely before making the buttercream filling by mixing softened butter and gradually adding powdered sugar along with vanilla, salt, and cream.
- Assemble by piping buttercream on half the shells and topping them with the remaining halves.
- Refrigerate for 24 to 48 hours before serving for enhanced flavor.
