- ¾ cup crumbled feta cheese (plus extra for topping)
- 2 tbsp chopped fresh dill
- 1 tbsp olive oil
- 4 large eggs
- 1 clove garlic, minced
- 3 medium zucchini, grated & squeezed dry
- Salt & black pepper, to taste
- 2 green onions, chopped
- 1 cup cottage cheese
- Extra feta for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease your 8×8-inch baking dish.
- Grate zucchini, place in towel, and squeeze out moisture.
- In a bowl, whisk together eggs and cottage cheese.
- Stir in zucchini, green onions, garlic, dill, olive oil, and feta; season with salt and pepper.
- Pour mixture into baking dish, top with extra feta if desired, and bake for 35-40 minutes.
- Let cool for 10 minutes, then slice and serve warm or chilled.
Notes
Ensure zucchini is drained to avoid sogginess. Can be prepared in advance and stored for quick meals.
