Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1/2 cup cauliflower florets
  • 1/4 cup unsweetened almond milk
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons nutritional yeast (optional for extra flavor)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis and set aside.
  2. Heat olive oil in a skillet over medium heat and cook seasoned chicken breasts for 6-7 minutes on each side until fully cooked.
