- 3/4 cup boiling water
- 1 teaspoon baking soda
- 1 1/4 cups all-purpose flour
- 3/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
- Start by placing the chopped dates into a bowl and pouring the boiling water over them. Add in the baking soda and give it a gentle stir. Let this mixture sit for about 10 minutes.
- In a separate mixing bowl, beat the softened unsalted butter and brown sugar together until light and fluffy. Add the eggs one at a time and mix well, then add vanilla extract.
- Sift the all-purpose flour, baking powder, and salt together. Gradually fold the dry ingredients into the butter-sugar-egg mixture until just combined.
- Gently fold in the softened dates and their water, then pour the batter into the prepared cake pan.
- Bake in the preheated oven for 30–35 minutes. Test for doneness with a toothpick. Allow to cool before serving.
