  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Start by placing the chopped dates into a bowl and pouring the boiling water over them. Add in the baking soda and give it a gentle stir. Let this mixture sit for about 10 minutes.
  2. In a separate mixing bowl, beat the softened unsalted butter and brown sugar together until light and fluffy. Add the eggs one at a time and mix well, then add vanilla extract.
  3. Sift the all-purpose flour, baking powder, and salt together. Gradually fold the dry ingredients into the butter-sugar-egg mixture until just combined.
  4. Gently fold in the softened dates and their water, then pour the batter into the prepared cake pan.
  5. Bake in the preheated oven for 30–35 minutes. Test for doneness with a toothpick. Allow to cool before serving.
