  • 1 tsp salt
  • 1 cup brown sugar
  • 2 tbsp ground cinnamon
  • ⅓ cup unsalted butter, softened (for filling)
  • 2 tbsp dry cake mix (for filling)
  • ¼ cup rainbow sprinkles (for filling)
  • 8 oz cream cheese, softened
  • ¼ cup unsalted butter, softened (for frosting)
  • 2 ½ cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 23 tbsp heavy cream or milk
  • ¼ cup rainbow sprinkles (for topping)

Instructions

  1. Prepare the Dough: Warm the milk slightly to about 110°F. Combine with granulated sugar and instant yeast in a bowl, let sit until foamy.
  2. Combine Ingredients: Add in eggs, melted butter, vanilla extract, and dry cake mix, mixing until smooth. Gradually add flour and salt, kneading into a soft, slightly sticky dough.
  3. First Rise: Cover and let the dough rise in a warm place for 1 hour or until doubled in size.
  4. Make the Filling: Mix softened butter, brown sugar, ground cinnamon, and dry cake mix in a bowl, then fold in rainbow sprinkles.
  5. Roll Out the Dough: Roll out into a large rectangle, spread filling mixture over, leaving half an inch at the edges.
  6. Shape the Rolls: Roll tightly from the long side and slice into 12 equal pieces.
  7. Second Rise: Place sliced rolls in a greased baking pan, cover, and let rise for another 30 to 45 minutes.
  8. Baking: Preheat oven to 350°F (175°C), bake for about 22 to 26 minutes until golden.
  9. Prepare the Frosting: Beat cream cheese and butter until fluffy, gradually add powdered sugar, vanilla, and heavy cream until smooth.
  10. Frost and Serve: Once rolls are cooled, frost with cream cheese frosting and top with sprinkles.

Notes

If rolls don’t rise, check yeast freshness. Can freeze unbaked rolls; thaw and bake when ready.
