Instructions

  1. Begin by placing the softened unsalted butter in a large mixing bowl. Using an electric mixer or a whisk, beat the butter until it becomes soft and fluffy, which typically takes about 2-3 minutes.
  2. Once the butter is fluffy, add in the powdered sugar, fresh orange zest, vanilla extract, and salt. Mix everything together until it’s fully combined.
  3. Gradually add in the all-purpose flour, mixing until just incorporated.
  4. Gently fold the dried cranberries into the dough using a rubber spatula.
  5. To help the cookies maintain their shape, chill the dough in the refrigerator for at least 30 minutes.
  6. Once chilled, lay out two sheets of parchment paper. Place the dough between them and roll it out to about 1/4-inch thickness.
  7. Preheat your oven to 325°F (160°C) and bake the cookies for 12–14 minutes.
