The Feta and Cranberry Chickpeas is a beautiful blend of vibrant flavors and textures, creating a salad that’s both exciting and wholesome.
Ingredients

- 1 (15 oz) can chickpeas, drained and rinsed
- ½ cup crumbled feta cheese
- ¼ cup dried cranberries
- 2 tbsp chopped walnuts or pistachios
- ¼ cup chopped fresh parsley or basil
- 2 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- ½ tsp honey or maple syrup (optional)
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Drain and rinse the chickpeas under cold water. Pat dry with a paper towel.
- In a medium-sized mixing bowl, combine chickpeas, dried cranberries, chopped herbs, and chopped nuts. Mix well.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey or maple syrup, salt, and black pepper until smooth.
- Pour dressing over the salad mixture and toss to coat evenly.
- Sprinkle crumbled feta over the top and mix lightly.
Notes
The chickpeas should be completely dry before mixing to allow the dressing to adhere well.
