Description

The Feta and Cranberry Chickpeas is a beautiful blend of vibrant flavors and textures, creating a salad that’s both exciting and wholesome.


Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • ½ cup crumbled feta cheese
  • ¼ cup dried cranberries
  • 2 tbsp chopped walnuts or pistachios
  • ¼ cup chopped fresh parsley or basil
  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • ½ tsp honey or maple syrup (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Drain and rinse the chickpeas under cold water. Pat dry with a paper towel.
  2. In a medium-sized mixing bowl, combine chickpeas, dried cranberries, chopped herbs, and chopped nuts. Mix well.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey or maple syrup, salt, and black pepper until smooth.
  4. Pour dressing over the salad mixture and toss to coat evenly.
  5. Sprinkle crumbled feta over the top and mix lightly.

Notes

The chickpeas should be completely dry before mixing to allow the dressing to adhere well.
