- ⅓ cup powdered sugar
- ½ tsp pistachio extract (or 2 tbsp finely ground pistachios)
- ½ tsp vanilla extract
- ¾ cup fresh raspberries (plus more for garnish)
- 1 tbsp honey or sugar (for raspberry puree)
- 100g digestive biscuits or graham crackers (crushed)
- 3 tbsp unsalted butter (melted)
- Optional: a drop of green food coloring
- Optional: crushed pistachios for topping
Instructions
- Create the Raspberry Puree: Blend fresh raspberries with honey or sugar until smooth.
- Prepare the Crust: Mix crushed digestive biscuits with melted butter and press into molds.
- Make the Cheesecake Filling: Whip cream cheese and mix with sugar and extracts.
- Layer the Mixtures: Spoon cheesecake filling, layer with raspberry puree, and top with more filling.
- Chill Until Firm: Refrigerate for at least 4 hours.
- Unmold and Garnish: Carefully release from molds and top with pistachios or raspberries.
