Instructions
- Preheat oven to 350°F (175°C) and prepare a springform pan.
- Mix crushed graham crackers and melted butter, then press into the pan.
- Bake crust for 10 minutes and let cool.
- Beat cream cheese and sugar until smooth, fold in lime juice, zest, and vanilla.
- Whip heavy cream with powdered sugar, then gently fold into cream cheese mixture.
- Pour filling into cooled crust, chill for at least 4 hours.
- Make glaze with remaining lime juice, cornstarch, and sugar, then cool.
- Spread glaze on set cheesecake and serve chilled.
