- 2 tbsp honey
- ½ cup walnuts, finely chopped
- ¼ tsp black pepper
- 1 tbsp fresh basil, finely chopped
- 8 oz cream cheese, softened
- ¼ cup grated Parmesan cheese
- 4 oz ricotta cheese
- Fresh basil sprigs, for garnish
- Extra honey, for drizzling
- Crackers or sliced baguette, for serving
Instructions
- In a mixing bowl, start combining the softened cream cheese, ricotta, Parmesan, garlic powder, black pepper, chopped basil, and honey. Use a spatula or mixer to blend everything until the mixture is smooth and creamy. Make sure there are no lumps for the best texture in your cheese log. The sweetness from the honey should balance well with the savory notes of the cheeses and spices, creating a deliciously rich mixture.
- Once your cheese mixture is smooth, take a sheet of plastic wrap and scoop the mixture onto it. With the help of the plastic wrap, shape the cheese into a log form, rolling it tightly to keep the edges smooth and well-formed. Once shaped, twist the ends of the plastic wrap to secure it and place it in the refrigerator to chill for at least two hours.
- After the chilling period, remove the cheese log from the refrigerator. Carefully unwrap it from the plastic and transfer it onto a plate or cutting board. Now, set aside your finely chopped walnuts. Roll the chilled cheese log in the chopped walnuts until it’s coated evenly all around.
- Place your beautifully coated Walnut and Honey Italian Cheese Log on a serving platter. Garnish it with fresh basil sprigs, and for an extra touch of sweetness, drizzle some additional honey over the top. Pair it with crackers or sliced baguette for a delightful appetizer experience.
