- 10 oz cheese ravioli
- 1 cup heavy cream
- 1/3 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 1/4 cup fresh basil, chopped
- 1/3 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Begin by bringing a large pot of salted water to a generous boil. Once boiling, carefully add the cheese ravioli and cook according to package instructions, usually about 3 to 5 minutes, until tender yet al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat, then add minced garlic and sauté for about 30 seconds until fragrant.
- Add chopped sun-dried tomatoes and cook for 1 to 2 minutes.
- Pour in the heavy cream, stir to combine, and let simmer for about 4 to 5 minutes until slightly thickened.
- Season with salt and black pepper to taste; add red pepper flakes if desired. Gradually stir in grated Parmesan cheese until melted.
- Add spinach and stir gently until wilted, about 1 to 2 minutes.
- Fold in the drained ravioli into the sauce until well coated and heat through for another minute.
- Serve hot, garnished with extra black pepper, Parmesan, and fresh basil.
Notes
This dish is quick to prepare and can easily be customized by adding proteins or additional vegetables.
