Delightful Easter Cake Mix Cookie Bars are perfect for spring, offering vibrant pastel hues, a chewy texture, and a sweet surprise with pastel M&Ms and sprinkles. Enjoy these easy-to-make, festive bars at any gathering, and customize them with your favorite candies or sprinkles.

Ingredients

Scale
  • 1 box (15.25 oz / 432 g) yellow or white cake mix
  • 2 large eggs, room temperature
  • 1/2 cup (120 ml) vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 cup (175 g) pastel M&Ms, plus 1/4 cup (45 g) for topping
  • 2 to 3 tablespoons pastel sprinkles (optional), plus extra for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish with parchment paper or a light coating of cooking spray.
  2. In a large mixing bowl, combine cake mix, eggs, and vegetable oil until smooth. Add vanilla extract and mix well.
  3. Fold in 1 cup of pastel M&Ms and sprinkles into the batter, setting aside some for topping.
  4. Spread batter evenly in the prepared pan, sprinkle reserved M&Ms and sprinkles on top, and lightly press them in.
  5. Bake in the oven for 25 to 30 minutes, or until edges are golden and a toothpick comes out mostly clean.
  6. Allow to cool for 10 minutes in the pan, then lift out using parchment paper and let cool completely on a wire rack before cutting.

Notes

Ensure eggs are at room temperature for a smooth batter, and avoid over-mixing to keep bars chewy.
