Instructions
- Start by placing the instant pistachio pudding mix into a mixing bowl. Pour in the cold milk—all 1 1/2 cups—and whisk together vigorously. Within about two minutes, you should see the mixture thicken, creating a smooth pudding consistency.
- Incorporate the 1/2 teaspoon of peppermint extract into the thickened pudding. Gently stir it in.
- Gently fold the thawed whipped topping into the pistachio pudding mixture.
- Carefully spoon the mixture into the prepared chocolate cookie crust.
- Garnish with whipped cream and green sprinkles, then chill for at least 1 hour before serving.
