- 2 cups cooked shredded chicken
- 1 cup shredded Mexican cheese blend
- 1/3 cup cream cheese, softened
- 1/4 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 10–12 small flour or corn tortillas
- Olive oil or cooking spray for brushing

- Begin your culinary journey by preheating your oven to 425°F (218°C). This ensures a hot environment right when you place your taquitos inside, helping them achieve that perfect crispiness.
- In a large mixing bowl, combine the shredded chicken with the shredded Mexican cheese blend, softened cream cheese, salsa, chili powder, garlic powder, ground cumin, onion powder, and season with salt and pepper. Mix until all ingredients are well combined.
- To make rolling the taquitos easier, wrap 2–3 small tortillas in a damp paper towel and heat them in the microwave for about 30 seconds. This simple step will soften the tortillas, making them pliable and reducing the risk of tearing when you roll them up.
- Once your tortillas are warm and soft, it’s time to assemble the taquitos! Take one tortilla and place 2-3 tablespoons of your chicken filling near one edge and roll it tightly.
- For that gorgeously golden and crispy texture, lightly brush the tops of the taquitos with olive oil or give them a quick spritz with cooking spray.
- Now, slide your baking sheet into the preheated oven and allow the taquitos to bake for 15–20 minutes. Keep an eye on them as they bake.
- Once baked, take the taquitos from the oven and allow them to cool for a minute or two. Serve them warm with your favorite dipping sauces.
Notes
These taquitos can be made ahead of time and stored in the freezer before baking. Just thaw and bake when ready!
