Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup fresh or frozen blueberries

Instructions

  1. In a large bowl, combine the all-purpose flour, baking powder, granulated sugar, and salt. Whisk these ingredients together until they are well-blended, ensuring there are no lumps.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Gently pour the wet mixture into the bowl with the dry ingredients. Stir the batter until just combined, being careful not to overmix.
  4. Carefully fold in the blueberries.
  5. Heat a skillet or griddle over medium heat, lightly greasing it. For each pancake, pour 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface.
  6. Once cooked, serve the pancakes warm with maple syrup.
