- 1.5 cups milk
- 1 cup sharp cheddar cheese, shredded
- 0.25 cup blue cheese crumbles
- Salt and pepper to taste
- Optional: dash of hot sauce or cayenne

Instructions
- Start by cutting your boneless skinless chicken breast into bite-sized pieces. In a bowl, mix these pieces with olive oil, garlic powder, smoked paprika, salt, and pepper, ensuring every piece is thoroughly coated with the seasoning.
- Heat a large skillet over medium-high heat and add the seasoned chicken pieces. Sear them until they achieve a golden hue and are cooked through, which will take about 6–8 minutes. Once done, remove the chicken from the skillet and set aside.
- Lower the skillet to medium heat and add butter, followed by minced garlic. Allow the garlic to become fragrant, then introduce the buffalo wing sauce and optional honey. Whisk to combine, and let the mixture simmer for a couple of minutes.
- Return the previously cooked chicken to the skillet, tossing to coat each piece in the buffalo garlic sauce. Allow it to simmer an additional two minutes.
- While your chicken simmers, bring a pot of salted water to a boil. Cook rotini pasta to an al dente finish, reserving a quarter cup of the pasta water for later, before draining.
- In a separate saucepan, melt butter over medium heat and stir in flour to form a roux. Gradually whisk in milk, cooking until the mixture thickens. Reduce the heat and incorporate the sharp cheddar cheese, salt, and pepper.
- Fold the drained pasta into the cheese sauce, followed by the blue cheese crumbles. Plate this cheesy masterpiece, topping it with the buffalo garlic chicken bites. Garnish with extra blue cheese and celery sticks for contrast and serve hot.
