Description
This Easy Cheesy Chicken Broccoli Rice Casserole delivers just that — a harmony of flavors and textures that is bound to make it a family favorite.
Ingredients
Scale
- 2 cups cooked white rice
- 2 cups cooked chicken (shredded or cubed)
- 2 cups broccoli florets (steamed or blanched)
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese (divided)
- 1/4 cup grated Parmesan cheese
- Optional Topping: 1/2 cup crushed buttery crackers or breadcrumbs
Instructions
- Start by preheating your oven to 350°F (175°C). This ensures that your casserole will cook evenly and thoroughly. Meanwhile, grease your 9×13-inch baking dish to prevent the casserole from sticking.
- In a large mixing bowl, bring together the cooked rice, shredded or cubed chicken, broccoli florets, cream of chicken soup, sour cream, and milk. Add the garlic and onion powders, black pepper, 1 cup of the shredded cheddar cheese, and all of the Parmesan cheese. Mix until the ingredients are well-combined.
- Spread the mixture evenly into your prepared baking dish. Sprinkle the remaining cheddar cheese on top, followed by a layer of crushed crackers or breadcrumbs if you’re using them. Bake the casserole for 25-30 minutes until it’s bubbly and the cheese has melted into a golden perfection. Allow it to sit for about 5 minutes before serving.
Notes
To save time, prepare your rice and chicken ahead of time or use leftovers. This not only speeds up preparation but also adds depth as flavors meld overnight.
