- 2 medium tomatoes, diced
- 1 tsp garam masala
- 2 tbsp fresh cilantro, chopped (for garnish)

- 2 cloves garlic, minced
- 1 inch ginger, grated
Instructions
- Begin by heating vegetable oil in a large pan over medium heat. Add the sliced onions and sauté until golden brown.
- Add minced garlic and grated ginger, cooking for about a minute.
- Stir in ground cumin, coriander, turmeric, and chili powder. Mix well to toast the spices.
- Add chicken, ensuring each piece is coated with the spice mixture. Cook until no longer pink.
- Introduce tomatoes and bell peppers, cooking for 5-7 minutes until tomatoes soften.
- Season with salt and garam masala. Let cook for an additional 2-3 minutes. Garnish with cilantro and serve hot.
