Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil, divided
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup sugar snap peas
  • 1 small carrot, julienned
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Salt and black pepper to taste
  • For the Sauce:
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth or water
  • 1 teaspoon sesame oil (optional)

Instructions

  1. Start by preparing the sauce that brings everything together. In a small bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch until smooth. Gradually incorporate the chicken broth or water, followed by sesame oil if desired. Set aside.
  2. Heat one tablespoon of vegetable oil in a large skillet over medium-high heat. Add the thinly sliced chicken, season with salt and pepper, and cook until golden.
  3. Add the remaining tablespoon of oil, toss in broccoli, bell peppers, carrots, and sugar snap peas. Sauté for 3-4 minutes.
  4. Add minced garlic and grated ginger; stir quickly until fragrant.
  5. Return chicken to skillet, pour in the prepared sauce, and stir well. Let simmer for 1-2 minutes until thickened.
