Instructions
- Start by preparing the chicken breasts. To ensure they cook evenly, slice them in half lengthwise to create thinner cutlets. This also reduces the cooking time, allowing for a speedy meal. Once sliced, season both sides with garlic powder, salt, and pepper.
- In a large skillet, combine butter and olive oil. Heat the mixture over medium-high heat until the butter is melted and bubbling. Place the seasoned chicken cutlets into the skillet, allowing them to sizzle as they cook. Cook for around 5–6 minutes per side until they turn golden brown and reach an internal temperature of 165°F.
- Utilize the same skillet to make a delicious sauce. Begin by sautéing the chopped onions over medium heat until they become translucent, about 3–4 minutes. Add the minced garlic and cook for another minute until fragrant. Pour in the chicken broth and cube in the cream cheese. Stir in Italian seasoning and red pepper flakes if using. Stir continuously until the cream cheese has melted and the sauce is smooth.
- Return the cooked chicken to the skillet, ensuring they are well-coated with the sauce. Adjust seasoning to taste and garnish with parsley before serving.
