  • 12 oz cheese tortellini (fresh or frozen)
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup Parmesan cheese, grated
  • 2 cups broccoli florets (steamed or cooked)
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by bringing a large pot of salted water to a rolling boil. Add your cheese tortellini and cook according to package instructions: 3-5 minutes for fresh tortellini, or 8-10 minutes for frozen. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning. Cook for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for about a minute. Pour in heavy cream and chicken broth, simmer for 2-3 minutes. Gradually stir in Parmesan cheese until melted.
  4. Return the chicken to the skillet with broccoli and drained tortellini, toss to coat in the sauce. Adjust sauce thickness with broth or pasta water as needed.

Notes

For a lighter version, substitute heavy cream with a combination of milk and Greek yogurt.
