- 2½ lbs beef chuck, cut into chunks (halal)
- 4 carrots, sliced
- 4–5 potatoes, peeled and cubed
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce (halal)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- ½ tsp black pepper
- Salt to taste
- 2 bay leaves
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Instructions
- Start by adding the beef chunks, sliced carrots, cubed potatoes, chopped onion, and minced garlic into your crockpot.
- In a separate bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, dried thyme, rosemary, paprika, black pepper, and salt.
- Once your broth is ready, gently pour it over the ingredients placed in the crockpot. Add the bay leaves and cover the crockpot with its lid, setting it to low for 8 hours or high for 4 to 5 hours.
- If you prefer a thicker stew, mix 2 tablespoons of cornstarch with an equal amount of water in a small bowl and stir this into the stew during the last 30 minutes of cooking.
- After the cooking time is complete, carefully remove the bay leaves, give the stew a good stir, adjust the seasonings if necessary, and serve it warm in bowls, garnished with fresh herbs if desired.
Notes
For best results, choose beef chuck, as it tenderizes beautifully during slow cooking.
