Description

Stressful days call for comforting meals, and there’s nothing quite like a warm bowl of Easy Crockpot Beef Tips & Noodles to chase your worries away.

Ingredients

Scale
  • 2 pounds beef stew meat or chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons cold water (for slurry)
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 12 oz egg noodles, cooked separately
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by heating olive oil in a large skillet over medium-high heat. This step is essential as it caramelizes the beef surface, creating a depth of flavor that’s hard to resist. Sear the beef cubes in batches until they are nicely browned on all sides, ensuring they develop a rich crust. This process takes about 5-7 minutes per batch. Once browned, transfer the beef cubes to your slow cooker, ready for the next stage.
  2. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion turns translucent and fragrant, approximately 3-4 minutes. This step enhances the overall flavor profile of the dish. Add the cooked onions and garlic directly on top of the beef in the crockpot, allowing the warmth to infuse the meat.
  3. In a separate bowl, combine the beef broth, cream of mushroom soup, Worcestershire sauce, soy sauce, onion powder, garlic powder, and black pepper. Whisk the mixture together until smooth, ensuring there are no lumps from the cream of mushroom soup. Pour this luscious mixture over the beef and aromatics in the crockpot, spreading it evenly to ensure all the beef is coated in this delightful gravy.
  4. Cover the crockpot with its lid and cook on LOW for 7–8 hours or HIGH for 4–5 hours. The longer cooking time on low allows the beef to become incredibly tender, while the flavors meld beautifully. After the appropriate cooking time, the beef should be fork-tender, ready to be served over the noodles.
  5. If you desire a thicker gravy, mix cornstarch and cold water in a small bowl to create a slurry. Stir this mixture into the crockpot during the last 30 minutes of cooking. This will help achieve your preferred consistency for the gravy, making every bite luscious and creamy.
  6. While the beef is nearing completion, cook the egg noodles according to the package instructions, usually about 6-8 minutes in boiling water. Drain the noodles and toss them with a drizzle of oil or a pat of butter to prevent stickiness. This creates a rich base for your beef tips.
  7. Once everything is cooked, serve the beef tips and gravy over the egg noodles, and don’t forget to garnish with freshly chopped parsley. This not only adds a pop of color but also freshness to the dish.
