  • 375 ml low-sodium chicken broth
  • 680 g boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon paprika
  • 240 ml tzatziki sauce
  • 1 medium cucumber, thinly sliced for garnish (optional)
  • 60 g crumbled feta cheese
  • 30 g chopped fresh parsley or dill, for garnish

Instructions

  1. Begin by preheating your oven to 190°C (375°F) and greasing your baking dish.
  2. Next, spread the uncooked rice evenly across the bottom of the prepared dish.
  3. Distribute the cut chicken breasts evenly over the rice and sprinkle with spices.
  4. Spoon the tzatziki sauce across the surface of the chicken.
  5. Cover with aluminum foil and bake for 35 to 40 minutes.
  6. Remove from oven, allow to rest for 5 minutes, and garnish before serving.
