  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 (1.75 oz) package fruit pectin
  • 1/4 teaspoon ground cloves (optional)

Instructions

  1. Begin by peeling, coring, and finely chopping the tart apples into small, uniform pieces. Toss with lemon juice to prevent browning.
  2. In a saucepan, combine brown sugar, granulated sugar, water, and salt over medium heat, stirring until a golden caramel forms (5-7 minutes).
  3. Add chopped apples, cinnamon, nutmeg, and optional cloves, stirring until apples soften.
  4. Bring to a rolling boil, stir in fruit pectin, and boil for one minute.
  5. Remove from heat, add vanilla extract, and check if jam is set.
  6. Pour hot jam into sterilized jars, leaving 1/4 inch space at the top, seal, and cool.

Notes

Store any unused jam in the refrigerator for up to three weeks or process in a water bath canner for long-term storage.
