  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon nutmeg (optional)
  • 2 tablespoons chopped fresh herbs (like dill or parsley, optional)

Instructions

  1. If using frozen spinach, make sure it is completely thawed before squeezing out as much moisture as possible. This step is critical to preventing a watery casserole. For those opting for fresh spinach, chop it and sauté briefly until it wilts, then allow it to cool before adding it to your mixture.
  2. In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté it for approximately 5 to 6 minutes until it becomes translucent and tender. Then, incorporate the minced garlic, cooking it for another 30 seconds just until fragrant. Remove from heat and allow to cool slightly.
  3. In a large mixing bowl, whisk together the eggs and the milk (or half-and-half) until well combined. This will form the base of your casserole, creating a luscious egg mixture.
  4. Into the bowl containing your egg mixture, add the drained spinach, the sautéed onion and garlic, crumbled feta, nutmeg (if using), salt, and pepper. You can also mix in the optional chopped herbs at this stage. Stir everything thoroughly until well combined.
  5. Preheat your oven to 375°F (190°C) if you haven’t done so already. Lightly grease the 8×8 inch baking dish to prevent sticking. Carefully pour the prepared mixture into the greased dish, smoothing out the top to ensure even baking.
  6. Place the casserole in the preheated oven and bake for about 35 to 40 minutes. You’ll know it’s done when the top is golden brown, and the center is set—insert a knife to check, it should come out clean.
