- 2 lbs russet potatoes, peeled and thinly sliced
- 2 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 cup heavy cream
- 1 cup shredded Gruyère cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon fresh thyme, chopped
- Salt and black pepper, to taste
Instructions
- Start by preheating your oven to 375°F (190°C) while you prepare the rest of the ingredients. Grease a 9×13-inch baking dish generously with butter or non-stick spray.
- In a large skillet over medium heat, melt the 4 tablespoons of unsalted butter. Add the sliced onions along with a pinch of salt. Stir occasionally and allow the onions to cook slowly for 20-25 minutes until golden brown.
- Begin by placing half of the thinly sliced russet potatoes at the bottom of your greased baking dish. Spread half of the caramelized onions evenly on top. Pour half of the heavy cream, then sprinkle with half of the shredded Gruyère and mozzarella cheese. Repeat the layering process with the remaining ingredients.
- Cover the dish tightly with foil and bake for 45 minutes. Remove the foil and continue baking for another 15-20 minutes, or until the cheese is golden brown and bubbly. Let the dish rest for about 10 minutes before serving.
Notes
Slowly caramelizing the onions is essential, so resist the urge to turn up the heat; this develops their natural sweetness and flavor.
