- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup Greek yogurt
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 1/2 cups grated zucchini
- For the Lemon Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or oil, dusting it with flour.
- In a medium bowl, mix dry ingredients: flour, baking powder, baking soda, and salt.
- In a large bowl, beat sugar and eggs until light and fluffy. Add oil, yogurt, lemon juice, zest, and vanilla; mix well.
- Gradually add dry ingredients to wet ingredients, folding gently until combined.
- Fold in grated zucchini until evenly distributed.
- Pour batter into prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes in the pan before transferring to a wire rack. Drizzle with lemon glaze.

Zucchini should be well-drained to avoid excess moisture.
