- 1 cup cottage cheese (full-fat or low-fat)
- 2 eggs
- 1 cup oat flour (or use almond flour for fewer carbs)
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp olive oil (optional)
- ½ tsp garlic powder or Italian seasoning (optional)
Instructions
- Blend the cottage cheese until smooth in a blender.
- In a mixing bowl, whisk together eggs and blended cottage cheese; add olive oil if using.
- Add flour, baking powder, salt, and optional seasonings to the wet mixture; stir until combined.
- Divide dough into 2-3 pieces, roll on floured parchment paper.
- Bake in preheated 375°F oven for 15-18 minutes until golden.
Notes
Store leftover flatbread in an airtight container for up to two days. Reheat for crispness before serving.
