- 3 cups shredded rotisserie chicken
- 1 (30-ounce) bag frozen shredded hash browns, thawed
- 1 cup sour cream
- 1 (10.5-ounce) can cream of chicken soup
- 2 cups shredded cheddar cheese, divided
- 1 small onion, finely chopped
- 6 tablespoons unsalted butter, melted and divided
- 2 cups crushed cornflakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Start by preheating your oven to 350°F (175°C). This sets the stage for baking your casserole to perfection. Meanwhile, lightly grease a 9×13-inch baking dish with a bit of cooking spray or butter to ensure that the casserole doesn’t stick.
- Using a fork or your hands, shred the rotisserie chicken into bite-sized pieces. This step allows for easy incorporation into the casserole and ensures every bite is flavorful. Set the shredded chicken aside while you prepare the mix.
- In a large mixing bowl, combine the thawed hash browns, shredded chicken, sour cream, cream of chicken soup, 1 1/2 cups of shredded cheddar cheese, chopped onion, 4 tablespoons of melted butter, salt, and pepper. Stir these ingredients together thoroughly to create a creamy mixture that brings all the flavors together.
- Spread the creamy mixture evenly into the prepared baking dish. This allows for even cooking and ensures every portion of the casserole is just as delicious as the last.
- Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of the mixture.
