- 2 cups fresh spinach, chopped (or use frozen spinach, thawed and drained)
- 1 cup crumbled feta cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/2 cup breadcrumbs (substitute with gluten-free breadcrumbs if needed)
- 1/4 cup grated Parmesan cheese (optional, for extra flavor)
- 1/4 tsp dried oregano
- Salt and pepper to taste
- 1 tbsp olive oil (for greasing)
- 1 tbsp olive oil (for brushing the patties)
Instructions
- Start by preheating your oven to 375°F (190°C) and prepare your baking sheet.
- In a large mixing bowl, combine spinach, feta, onion, garlic, and egg. Add breadcrumbs, Parmesan, oregano, salt, and pepper; mix well.
- Shape the mixture into small patties and place them on the baking sheet, spaced evenly.
- Brush patties with olive oil.
- Bake for 20-25 minutes, flipping halfway through until golden brown.
- Serve warm with tzatziki or your favorite sauce.
Notes
These patties can be frozen uncooked and baked later for convenience.
