- 1 lb boneless skinless chicken thighs or breasts
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey or brown sugar
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 0.5 tsp chili flakes (optional)
- 0.25 cup mayonnaise
- 2 tbsp Thai sweet chili sauce
- 1 tsp sriracha
- 1 tsp lime juice
- 0.5 tsp soy sauce
- 1 pinch salt
- 2 cups cooked jasmine rice
- 4 wedges fresh lime
- 2 tbsp fresh cilantro, chopped
- Optional extra sweet chili sauce or sriracha
Instructions
- Start by creating a flavorful marinade. In a bowl, combine the soy sauce, sesame oil, rice vinegar, honey, minced garlic, grated ginger, and chili flakes. Thoroughly mix these ingredients to form a smooth marinade. Add the chicken pieces to this mixture, and ensure each piece is well-coated. Cover the bowl and place it in the refrigerator for at least 30 minutes.
- While the chicken is marinating, take a separate bowl and whisk together the mayonnaise, Thai sweet chili sauce, sriracha, lime juice, soy sauce, and a pinch of salt. Keep whisking until the mixture is smooth and well-blended.
- Preheat your grill pan or outdoor grill to medium-high heat. If you’ve chosen to use skewers, thread the marinated chicken onto them now. Place the chicken on the grill, cooking it for approximately 4–5 minutes on each side until it is nicely charred and fully cooked through.
- Cook your jasmine rice according to the package instructions. Fluff the rice with a fork once it’s done, ensuring it remains light and fluffy.
- Now the fun part—assembling the bowl! Start by spooning a generous serving of the warm jasmine rice into each bowl. Add the grilled chicken on top and drizzle the prepared creamy chili sauce generously over the meat and rice. Garnish with fresh cilantro and lime wedges.
